Today, I spent half a morning baking my legendary cocoa cookies. What is special about these cookies is the ingredients used, which include not only wheat flour, but also tapioca flour, custard powder, and also corn flour. It made the texture really light. And these cookies is made even special by the special concotion that I used to glaze the cookie, i.e. whipped eggs, creamer, vanilla essence and thick cocoa powder.
The minute you popped this into your mouth it would melt. My.... it's really yummy. And I'm very sure, before we welcome Raya my kiddos would have finished half the cookies. And for that reason, I have decided to bake two portion, instead of just one.

Butterlicious Butter Cookies
24 September 2009, Thursday (5 Syawal)
Despite being extremely exhausted as we had been out the entire day doing errands and banking transactions (the only time I could do all these is when my hubby is on leave), Ina (my little princess) and I decided to bake cookies after maghrib prayers.
It was actually more of Ina's urging and the fact that I had just bought a biscuit pump earlier today, rather than anything else that had motivated me to agree to bake.
Ina stood next to me when I mixed all the ingredients (flour, corn flour, caster sugar, egg, vanilla essence, salt, and butter) to make buttercious butter cookies (my children's favourite). When I was mixing the ingredients, Ina had helped me to grease the cooking tray with butter.
Right after it's nicely mixed, I had passed Ina the biscuit pump to pump the butter cookies. And less than 2 hours later, we had 4 containers-full of oven-fresh butter cookies. Ina was so delighted as she did not realise that baking is that easy.
And soon after the cookies were baked, my hubby, Ina, and my three boys did not wait a moment longer to savour the "hot-from-the-oven" butter cookies and wiped out one container that night itself. Hmmmmmm..... that's what I'd call yummy, delicious butterlicious butter cookies.
Ina had planned to take back at least one container to UTM, Johor and I pray there'll be some left for her to take back....
As I'm now a full time home maker, I will have plenty of time to bake. Perhaps, my kids will now have year-round home-made cookies, rather than having to wait for the next Raya in 2010. Only time will tell, coz these days my passion is really blogging...........

Cookies in My Oven

My oven finally saw action after a lapse of 10 years, as this year, I decided to make Raya cookies again. The last time I baked cookies was in 1996. Although I love baking and cooking, I could not indulge in these passion due to heavy work commiment.
Today, I made kueh siput (my daughter's favourite) and cheese cookies (everyone's favourite). And I even managed to bake spaghetti and fuccini pie for my family plus a few other dishes for buka puasa.
And on 16 September, I baked Cocoa cookies. I felt great after baking after seeing the satisfied and delighted look on my "customers", i.e, my husband and four kids as thyey savoured the home-baked cookies.
Many years back, when they were still young, right after baking, I would hide the cookie jars for fear that my kids would wipe out the cookies before Raya and I would not have any cookies left to serve my guests.
And guess what, my kids are only interested to eat cookies during the fasting month. After Raya, they hardly touched the jars. And many times in the past, the cookies would be sitting in the jars several months after Raya, and finally, it would be thrown into the waste bin.
So, I've learnt my lesson well. And today, things are different, and my perception are different too. Even if they finished all the cookies before Raya, I'm fine with that.
What is far more important is the joy I see on their faces when they savour the cookies.....
